Blackened New York Strip Steaks

Steaks: 4-10 ounce New York Steaks
Preparation time: Approximately 15 minutes

Blackened Spice

1/2 cup Paprika
1 Tablespoon Salt
1 Tablespoon Onion Powder
1 Tablespoon Garlic Powder
1 Tablespoon Cayenne Pepper
1 Tablespoon White Pepper
1 Tablespoon Black Pepper
1 Tablespoon Thyme, dried
2 Tablespoon Oregano, dried

Mix together, dust meat with the spice.

Blackened New York Steaks

1 Medium Red Onion, Sliced
1 Red Bell Pepper, Sliced
1 Yellow Bell Pepper, Sliced
1 Medium Zucchini, Sliced

Brush steak with blackened spices and sear on a cast iron skillet with hot oil. Cook for 4 minutes and turn to the other side and cook for another 4 minutes for the steaks to be medium rare. Remove the steaks from the skillet and add the vegetable medley, cook the vegetables stirring constantly for 2 to 3 minutes or al dente, then distribute the amount evenly over the steaks.

These Cowboy steaks are best served with fresh garlic mashed potatoes.
