Char-grilled Filet Mignon with Bacon, Onion and Bleu Cheese Crumbles

4-8 ounce Filet Mignon
Preparation time: approximately 30-40 minutes

Bacon and Onions
4 cups Applewood Bacon, chopped
1 cup Onions, diced                                                          
1 teaspoon Course Grind Black Pepper                                   
4 Tablespoons Maytag Bleu Cheese Crumbles                       

Method: Chop the bacon into ¼ inch pieces and place in a hot sauté pan, stirring occasionally and cook until half done. Add the diced onion and continue to cook, remove from heat when the bacon is crisp. Mix in the pepper and hold until service. Set cheese aside for plating.

Filet
Method: Pre heat the grill, when very hot lightly season the filets with salt and pepper and place on the grill. Cook for 4 minutes then turn the steak over to grill the other side for 4 minutes. Repeat this procedure again so the steaks have been cooked twice on each side. Steaks should be medium rare.
