Tuscan Steak Rub
¼ cup fresh rosemary, finely chopped
¼ cup kosher salt
2 tablespoon fresh cracked black pepper
1 teaspoon red chili flakes
1 tablespoon dried oregano
1 tablespoon dried basil
1 tablespoon fresh garlic, minced
Lemon-Garlic Rosemary-Infused Oil
2 cups extra virgin olive oil
1 teaspoon kosher salt
3 cloves fresh garlic
6 sprigs fresh rosemary, de-stemmed
1 tablespoon lemon zest
Pasta Pomodoro Rustica
5 tablespoon extra virgin olive oil
2 tablespoon fresh garlic, minced
1 teaspoon red chili flakes
1½ cup cherry tomatoes, washed and quartered
½ cup red onion, julienned
1 lb spaghetti, cooked
Kosher salt & fresh ground black pepper, to taste
¼ cup fresh basil, washed & chopped rough
2 tablespoon fresh lemon zest
Preparation
Before cooking your steaks, a little preparation is needed.
First, prepare the Lemon-Garlic Rosemary-Infused Oil:
1. Place all ingredients in blender, blend on high for 30 seconds.
2. Pour contents into small bowl, and allow to steep at room temperature for at least 4 hours.
3. Strain oil through fine mesh strainer or cheesecloth. If preparing day prior, store in refrigerator. Allow oil to come to room temperature before serving.
4. Next, in small bowl, mix all ingredients for Tuscan Steak Rub and set aside for later use. Finally, cook the spaghetti as instructed on the package and set aside for later use.
Directions
Tuscan Top Sirloin Steaks
1. Remove steaks from refrigerator and liberally coat each side of the steak with the Tuscan Steak Seasoning Rub prepared earlier.
2. Heat oil in large cast-iron skillet on medium-high heat just smoking. Place steaks in pan and cook approximately 4 minutes. Do not move steaks during this time to allow a firm crust to develop. Turn steaks over and cook an additional 4 minutes on medium heat for medium rare doneness.
3. Remove steaks from pan and allow to rest 2-3 minutes prior to serving.
Pasta Pomodoro Rustica
1. Heat saute pan to medium-high, add oil.
2. Add garlic, chili flakes, tomatoes and onions to hot oil. Saute for 2 minutes or until garlic is golden brown.
3. Add cooked spaghetti to pan and toss to combine all ingredients.
4. Season with salt and pepper, to taste.
5. Add basil, toss again. Top pasta with lemon zest just prior to serving.
Plate Pasta Pomodoro Rustica and Tuscan Top Sirloin Steaks, drizzle entire dish with Lemon-Garlic Rosemary-Infused Oil, and serve.
